Cream of Courgette Soup


3ooml water with stock cube dissolved (use whatever cubes you like, I usually use Boullion powder), matching the right amount of your stock cubes/powder to that amount of liquid.

2 courgettes, topped & tailed and sliced into chunks

1 tablespoon quark


  1. Dissolve stock in the water, in a pot over a medium heat.
  2. Add courgette pieces.
  3. Bring to boil and simmer until courgette is soft.
  4. Take off the heat, add the quark and blitz with handblender or liquidiser.
  5. Enjoy 🙂
