3ooml water with stock cube dissolved (use whatever cubes you like, I usually use Boullion powder), matching the right amount of your stock cubes/powder to that amount of liquid.
2 courgettes, topped & tailed and sliced into chunks
1 tablespoon quark
- Dissolve stock in the water, in a pot over a medium heat.
- Add courgette pieces.
- Bring to boil and simmer until courgette is soft.
- Take off the heat, add the quark and blitz with handblender or liquidiser.
